Description
This recipe creates a festive appetizer by threading green olives, folded slices of hard salami, cherry tomatoes, fresh mozzarella pearls, and black olives onto disposable skewers. The variety of ingredients offers a balance of salty, tangy, creamy, and savory flavors, with a mixture of firm and soft textures. The salami is folded to add bulk and texture, and the olives provide briny contrast. The skewers can be arranged in a circular wreath shape on a serving platter to create an attractive presentation.
Balsamic glaze is used as a finishing touch, offering a thicker, sweeter, and less bitter flavor than balsamic vinegar, enhancing the overall flavor profile of the assembled skewers. Fresh herbs such as rosemary, thyme, and basil contribute visual appeal and subtle herbal notes when garnishing. The skewers can be made ahead and refrigerated in airtight containers for up to 12 to 18 hours before serving, which aids in event preparation.
This appetizer is ideal for party serving where guests can easily grab a skewered bite combining meat, cheese, and vegetables. The variety can be adjusted according to guest preferences by making some skewers without meat, olives, or with extra cheese.
Ingredients
- 20 green olives pitted (or pitted and stuffed)
- 40 lices hard salami
- 20 tomatoes cherry or grape
- 20 fresh mozzarella or ciliegine, pearls or balls
- 20 black olives such as Kalmatta, pitted or pitted and stuffed
- balsamic glaze as desired
- rosemary optional for garnishing; as desired, fresh sprigs
- fresh thyme optional for garnishing, as desired, sprigs
- basil optional for garnishing, as desired, fresh
Instructions
- To each skewer, I add a green olive, fold the salami in half and then in half again and skewer it, add a tomato, mozzarella pearl, black olive, another piece of folded salami; and repeat. Tips - For the skewers, I use these decorative bamboo skewers, although you can use something less decorative, or even plastic, but you'll want them to be disposable. You can add the food in any arrangement or pattern. You don't have to make all the skewers exactly identical. I find it's helpful to have some meatless, some without olives, and some with extra cheese, etc. Jump to Step 3 if you're not making this ahead of time for an event or party.
- Make Ahead - If you're assembling the skewers ahead of time, you can stop now, place them in large ziptop plastic bags or large airtight storage containers, seal, and refrigerate for up to 12-18 hours. Take them out and carry on with Step 3 before your event or party begins.
- Arrange a layer of skewers into a circle on your serving platter, tray, or cutting board.
- Arrange a second layer on top of the first layer, loosely placing them and arranging as desired.
- Tuck in the fresh herbs for garnishing, as desired around the wreath.
- Before serving, evenly drizzle with balsamic glaze* (and/or olive oil) and serve with crackers, toasted bread, baguette slices, or your favorite carbs for charcuterie.
- This recipe is best consumed after assembly and after it sits out for an event or party. Although if you have extra skewers, they'll keep airtight in the fridge for up to 5-7 days, provided they weren't super saturated with balsamic glaze or olive oil.
Notes
- Balsamic glaze is preferable to balsamic vinegar for drizzling, as it is thicker, sweeter, and less bitter.
- Skewers can be assembled up to 18 hours in advance and stored in airtight containers or zip-top bags in the refrigerator.
- Use disposable decorative bamboo skewers for convenience and presentation.
