Apple Pie Cake is a yummy combination of moist cinnamon cake and apple pie. It's the best of both worlds and perfect for a Fall dessert.

Ingredients
Ingredients
Cinnamon Sugar Cake :
- 3 C flour
- 3 tsp baking powder
- 1 tsp kosher salt
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 C unsalted sweet cream butter softened
- 1 C sugar
- 1 C light brown sugar
- 4 large eggs
- 2 tsp pure vanilla extract
- 1 1/2 C buttermilk
- 3 - 9 inch round cake pans
Apple Filling :
- 5 large granny smith apples peeled and chopped
- 4 tsp lemon juice
- 1/2 C sugar
- 1/2 C light brown sugar
- 4 tbsp cornstarch
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp kosher salt
- 2 C water
Pie Crust :
- 2 - 9 in round store bought pie crust
- 2 large eggs lightly beaten
Cinnamon Frosting
- 3 c unsalted sweet cream butter softened
- 6 C powder sugar
- 2 tbsp ground cinnamon
- 3-6 tbsp heavy whipping cream
- 1 large piping bag with a round tip
Walnut Crumble :
- 3/4 C flour
- 1/2 C oatmeal
- 1/2 C chopped walnuts
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1/2 tsp cinnamon
- 1/2 C unsalted sweet cream butter cold
- 1/2 C light brown sugar

Directions
Cinnamon Sugar Cake :
- Preheat oven to 350 degrees and spray the cake pans with pam baking spray
- Using a large bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg and cloves until combined
- Using a standing mixer, beat together the butter, sugar. and brown sugar until light and fluffy
- Beat in the eggs, 1 at a time until combined before adding the second egg
- Alternating between the flour and the buttermilk mix until combined after each portion
- Divide the batter between the 3 pans and bake in the oven for 30 minutes or until a toothpick comes out clean
- Allow to cool completely on the counter
Apple Pie Filling:
- In a large bowl, toss together the lemon juice and chopped apples
- In a large pot, combine the sugar, brown sugar, cornstarch, cinnamon, nutmeg and salt
- Add water and bring to a slow boil
- Once water is boiling, add in the apples and bring back to a boil for about 10 minutes
- Remove pot from stove and allow to cool completely
- The sauce will start to thicken as it cools
Pie Layer:
- Line a cookie sheet with parchment paper
- Place the pie crust onto the cookie sheet and brush with the egg mixture
- Bake in the oven for 15 minutes until golden brown
- Allow to cool completely
Walnut Crumble :
- Preheat oven to 350 degrees and line a cookie sheet with parchment paper
- In a medium bowl, Whisk together the flour, oats, walnuts, baking powder, salt and cinnamon until combined
- Cut the butter into cubes and place into the flour ingredients
- Using your fingers, make the crumble
- Pour crumble onto the cookie
- Bake in the oven for 8 minutes and the remove the cookie sheet and mix the crumble
- Bake again in the oven for another 8 minutes before removing and allowing to cool completely
Cinnamon Frosting :
- Using a standing mixer, beat together all ingredients until combined, fluffy and smooth with stiff peaks. Beat for about 5-7 minutes
- Add more powder sugar if you think your frosting is to soft
- Scoop about 2 C of the frosting into the piping bag and set aside
Building the cake :
- Place a 10inch round cake board onto a cake stand
- Place 1 layer of cake onto the cake board
- Scoop about 1 C of frosting onto the cake layer
- Place a layer of the pie crust onto the frosting
- Pipe two large rings around the pie crust
- Fill in the middle with 3/4 C of the apple filling
- Place another cake layer on top
- Repeat the steps with the second pie crust
- Place the third layer of cake on top of the second layer of apple filling
- Using the remaining frosting, frost entire cake
- Use your hands to break up the crumble
- Coat the bottom and the top in the crumble
- Place cake in the fridge to allow the frosting to harden up
- Cut into slices and enjoy!

- Makes 1 9inch round 3 layer cake

- Bake time 30-35 minutes
