Apple Salad

Made with an abundance of crisp sweet apples, fresh spring lettuce greens or spinach, crunchy toasted pecans, tangy feta, flavorful salty bacon and it's finished with a vibrant maple cider vinaigrette dressing. It's the perfect autumn salad but delicious any day of the year!

Ingredients

Servings
  • 10 oz. spring lettuce mix (with spinach), or baby spinach
  • 3 medium Gala apples, cored and thinly chopped
  • 1 cup pecans, toasted and chopped
  • 1 cup crumbled feta cheese, crumbled
  • 1/2 cup dried cranberries
  • 12 oz. bacon, cooked and chopped
  • 1/2 small red onion, sliced into thin strips

Maple-Cider Vinaigrette

  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 Tbsp pure maple syrup
  • 1 Tbsp Dijon mustard
  • 1/4 tsp Salt, or to taste
  • 1/4 tsp freshly ground black pepper

Instructions

  1. Make the dressing: Mix all ingredients in a bowl until well blended. Or add to a mason jar cover with lid and shake to blend well.
  2. In a large salad bowl layer together lettuce blend, apples, pecans, feta, cranberries, bacon, and red onion.
  3. Drizzle dressing over salad and toss to evenly coat.
  4. Serve immediately after adding dressing.
