Asian Chicken & Lime Soup
Description
Asian Chicken & Lime Soup combines chicken stock simmered with soy sauce, grated ginger, and freshly squeezed lime juice to build a bright and savory broth. Thin strips of chicken breast cook quickly in the hot stock, staying tender and juicy. Cut julienne vegetables including carrot, celery, zucchini, and chili peppers add texture and freshness to the dish. Glass noodles soaked beforehand provide a soft contrast to the crisp vegetables.
The combination of ginger and lime gives the soup a fresh, aromatic character balanced by the saltiness from soy sauce. Adding thin slices of chili pepper introduces subtle heat to enhance the flavors. The soup can be served hot, ladling broth over the vegetables and noodles just before eating to maintain their texture.
