Bacon Boursin Green Beans

Ingredients
- 1 strip of bacon cooked & crumbled
- ½ lb. green beans washed and trimmed
- 1 tbsp Boursin cheese plus extra for serving
- Sea Salt and Freshly Cracked Pepper to taste
Instructions
- Place bacon in a large skillet over medium heat and cook until it is cooked and crispy. Place on paper towels to drain then crumble; set aside.
- Drain all but 1 teaspoon of the bacon fat from the pan. Add the green beans to the large skillet along with 2 tbsp of water. Cover the pan with a lid and let it steam for 5 minutes, until crisp-tender.
- Remove the lid and sauté the beans for about 2 more minutes. Add the Boursin cheese to the pan and toss to coat. It should melt fairly quickly.
- Season the beans with sea salt and freshly cracked pepper to taste then top with bacon crumbles and little bits of extra Boursin cheese. Serve immediately. Enjoy.
