Bacon Wrapped Stuffed Chicken Breast

A creamy combination of blue cheese & cream cheese is stuffed in chicken, then wrapped in bacon, in this quick and easy stuffed chicken breast recipe!

Ingredients

  • 4 tablespoons cream cheese softened
  • 2 tablespoons buffalo sauce
  • 2 tablespoons blue cheese dressing
  • 2 boneless, skinless chicken breasts
  • 6 lices Bacon NOT thick cut

Instructions

  1. Preheat the oven to 375°F.
  2. Combine the softened cream cheese, buffalo sauce and blue cheese dressing in a small bowl.
  3. Butterfly the chicken breasts by slicing them lengthwise through the middle, without slicing all the way through.
  4. Open the chicken breasts, then spread the buffalo cheese mixture inside the chicken breasts.
  5. Fold the chicken breast back over the cheese mixture.
  6. Wrap each chicken breast with 3 slices of bacon.
  7. Heat a cast iron skillet on the stove over medium-high heat.
  8. Once the skillet is hot, add the bacon wrapped chicken breasts and sear for 5 minutes, then flip and sear for an additional 5 minutes.
  9. Transfer the skillet with the chicken breasts into the oven.
  10. Roast for 10 minutes, remove from the oven and flip the chicken breasts.
  11. Place back in the oven for an additional 10 minutes or until the bacon is crisp on the outside and the chicken breasts are cooked to 165°F internally.

Notes

  • If you do not have a cast iron skillet, you can use any oven-safe skillet to make this recipe. If you do not have an oven-safe skillet, use a large skillet on the stove, then transfer the bacon wrapped chicken breasts to a baking sheet to finish roasting them in the oven.
