Baked Goat Cheese Dip
Description
This dip features a blend of sautéed white onion, garlic, and cherry tomatoes seasoned with oregano and pepper flakes, all baked together with a whole piece of goat cheese until bubbling and golden. The goat cheese softens to a creamy texture surrounded by the slightly sweet and savory roasted tomatoes and onions. The dish is finished with a drizzle of olive oil infused with fresh oregano and basil, along with honey for a subtle sweetness contrast.
For serving, bread is sliced thin, brushed with olive oil and fresh garlic, then toasted in the oven until crisp, providing a sturdy and flavorful accompaniment to the warm dip. The combination of textures between the creamy cheese dip and crunchy bread makes it satisfying as an appetizer or light snack.
The notes suggest using vegan cheese substitutes if desired and stress the use of fresh herbs in the finishing oil to maintain brightness and fragrance in the dish.

- 1 tbsp. honey
Instructions
- Preheat the oven to 400F and line a baking sheet with parchment paper.
- To a small square baking sheet of choice, add the olive oil, onions, garlic, tomatoes, goat cheese, oregano, pepper and chilli flakes. Bake for 50 minutes or until the mixture is completely bubbly and the goat cheese is golden in color.
- While that bakes, cut your desired bread loaf into thin slices, coat with more olive oil and brush with a fresh garlic clove. Cook on the parchment live baking sheet for 5 minutes on each side once the goat cheese has been in the oven for 40 minutes. Remove both dishes once cooked.
- To a small bowl, combine 3 tbsp. of olive oil, chopped fresh oregano and basil. Stir till combined.
- Serve this oil on top of the goat cheese dip with a drizzling of honey! Dip with bread and live your best life! Enjoy!
Notes
- Use fresh herbs for the olive oil drizzle to maximize flavor and aroma.
- Vegan cheese alternatives can replace goat cheese; softer, salty varieties work best.
- Serve warm with toasted garlic bread slices for dipping.
