Baked Jalapeño Mac & Cheese

Elbow macaroni in a creamy jalapeno cheese sauce topped with a buttery bread crumb topping.

Ingredients

  • 12 ounces elbow macaroni
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 2 cups milk warmed
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • 3 ounces cream cheese cubed
  • 4 ounces jalapeños diced
  • 1 ½ cups shredded sharp cheddar cheese divided

Topping

  • 1 tablespoon butter
  • 2 tablespoons bread crumbs
  • 1 tablespoon bacon bits

Instructions

  1. Preheat oven to 400°F.
  2. Cook macaroni according to package directions, drain well.
  3. Meanwhile melt butter in a saucepan. Stir in flour and cook 1 minute.
  4. Slowly add milk a bit at a time whisking after each addition until smooth. Once all of the milk is whisked in, add cream cheese, salt, and garlic powder and whisk until smooth. Bring mixture to a boil over medium heat until thick and bubbly.
  5. Remove from heat and stir in 1 ¼ cups cheese, macaroni, and jalapenos.
  6. Pour into a 2 QT baking dish. Top with remaining cheese. Mix butter and breadcrumbs and sprinkle overtop.
  7. Bake 15-20 minutes or just until crumbs are golden.

Notes

  • Shred your own cheese for best results. Pre-shredded cheeses have anti-caking agents to keep them from clumping and they don't always melt smoothly.
  • Slowly add milk, a little at a time. It will seem pasty at first, add more milk and then whisk.  Continue adding milk and whisking until smooth after each addition.
  • Remove sauce from the heat before adding the cheddar cheese.
  • I prefer to use jarred, canned or pickled jalapenos in this recipe. If using fresh jalapenos, roasted and seed them first.
  • Shred your own cheese for best results. Pre-shredded cheeses have anti-caking agents to keep them from clumping and they don't always melt smoothly.
