Ingredients
- 1 egg
- 1/2 cup mayonnaise
- 3 medium bananas mashed
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 1/2 cups flour all-purpose
- 3/4 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon salt

Instructions
- Grease a large loaf pan or 3 mini loaf pans.
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine the egg, mayonnaise, vanilla extract, flour, sugar, baking soda, and salt together until just combined.
- Add in the mashed bananas and mix until incorporated. A few clumps here and there are okay.
- Pour batter into prepared pan, filling about 3/4 full.
- Bake in oven for about 60 minutes, or 45 minutes if making mini loaf pans.
- Remove from oven and allow to cool for at least 10 minutes before slicing and serving!
