Description

This recipe begins by creaming butter and sugar until pale and fluffy, then adding eggs one at a time followed by mashed bananas and vanilla extract to infuse moisture and flavor. Sifted self-raising flour and baking powder are folded in gently to maintain lightness. Banana slices, chopped 70% cocoa chocolate, roughly chopped hazelnuts, and Greek yogurt are incorporated last, contributing pockets of melted chocolate and nutty crunch, while yogurt adds moistness.

Baked in a greased loaf tin at a moderate temperature, the bread develops a golden crust while staying tender inside. The banana flavor is prominent, complemented by the slight bitterness of dark chocolate and toasted notes from the hazelnuts.

This bread works well as a snack or breakfast item and can be served plain or with butter. Cooling completely before slicing ensures clean cuts and proper texture.

  • 6 banana ripe, 3 mashed and 3 sliced
  • 225 g self-raising flour
  • 1 tsp baking powder
  • 100 g butter
  • 90 g caster sugar
  • 2 egg large
  • 1 tsp vanilla extract
  • 90 g Greek yogurt
  • 110 g cocoa chopped into chunks, 70%
  • cup hazelnuts roughly chopped

Instructions

  1. Preheat the oven to 180 celsius (350 fahrenheit) and grease 1 large loaf tin.
  2. In a large bowl of an electric mixer fitted with a paddle attachment cream the butter and caster sugar until pale. Add the eggs one at a time and mix well before adding the banana and vanilla.
  3. Switch off the mixer and sift in the flour and baking powder and fold through using a wooden spoon or spatula. Add the banana slices, chocolate, hazelnuts and yoghurt and fold through until just combined.
  4. Pour the mixture into the prepared loaf tin and then trim a piece of baking paper to size and place of the top of the loaf. Bake for 30 minutes before reducing the temperature to 160 celsius (320 fahrenheit) and baking for a further 30 to 40 minutes, or until a cake tester comes out cleanly.
  5. Remove from the tin and place on a wire rack to cool.
