Bazlama (Leavened Turkish Flatbread)

Bazlama is a soft, fluffy Turkish flatbread that’s delicious as a sandwich bread, served with saucy dishes, or enjoyed plainly with butter.

Ingredients

  • 500 g all-purpose flour ~18 oz, 3 and 2/3 cups
  • 1 teaspoon salt
  • 200 ml milk 4/5 cup, ~6,8 fl. oz
  • 100 ml water 2/5 cup, ~3, 4 fl. oz, warm
  • 1/2 teaspoon sugar
  • 1 tbsp instant yeast

Instructions

  1. Mix together the milk, water, sugar and yeast. Mix with a wooden spoon and let rest and bubble for 3 minutes.
  2. In a big bowl mix together the all-purpose flour and salt.
  3. Add milk mixture to the flour and mix until the dough starts to get together, start to knead in the bowl and always check the consistency. Add more liquid if too dry or if it's too sticky you can always add a tablespoon more flour.
  4. Transfer the dough to a clean surface and knead for 5 minutes, the dough should be smooth, elastic and not sticky. Place the dough back in the bowl and cover with a plastic wrap. Let the dough rest around 12 minutes in a warm place and it should double in size. Place the dough on a floured work surface and divide the dough into equal 4 pieces and shape them into balls. Cup the palm of your hand over one portion at a time and move your hand in a circular motion. The friction from the counter will help form the dough into a ball.
  5. After making balls press or roll them into 6-inch circles and about 3/4-inch thickness. Cover the dough with a damp cloth while you cook the bazlama.
  6. Cook in a stainless steel, cast iron or enamel pan on heat. When hot, place the dough in the pan and turn the heat to Low. Cook a total of 8 minutes, 3 minutes on each side until both sides get light brown (don’t flip before one side is done and make sure you're cooking on Low heat so the inside cooks before the outside gets too brown). Before taking the bread out of the pan, cook each side for another minute to make sure the center of the bread is cooked.
  7. Cut in half and spread some butter or condiment/filling for a sandwich.
