Beef and Broccoli

  • ¼ cup vegetable oil
  • 1 teaspoon ginger grated, fresh
  • 1 teaspoon garlic minced
  • ¼ cup beef broth
  • 1 pound broccoli cut into medium florets, fresh
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • green onion chopped for garnish
  • sesame seeds for garnish

Instructions

Marinade

  1. To a medium bowl, add steak, soy sauce, cornstarch, ginger, garlic, and baking soda. Stir to combine. Cover and place in the refrigerator to let the steak marinate for 30 minutes, up to 1 hour.

Sauce

  1. In a small bowl, combine beef broth, soy sauce, brown sugar, oyster sauce, and sesame oil. Set aside.

Beef and Broccoli

  1. To a large non-stick skillet over medium-high heat, add oil. Once the oil is hot, add the marinated steak in an even layer. Depending on the size of the skillet, you may have to work in batches. Cook for 2-3 minutes per side, or until crispy. Transfer the cooked steak to a plate and tent to keep warm. Reserve 2-3 tablespoons of oil in the skillet, discarding the rest.
  2. Reduce heat to medium. Add garlic and ginger. Cook for 1 minute. Pour in the beef broth and stir, scraping up any browned bits from the bottom of the skillet.
  3. Add the broccoli to the skillet and stir. Cook for 1-2 minutes. Then cover the skillet and continue cooking until the broccoli turns bright green.
  4. Add the sauce to the skillet. Bring it to a boil.
  5. In a small bowl, whisk together water and cornstarch. Add the mixture to the sauce, stirring continuously until slightly thickened, about 1-2 minutes.
  6. Return the cooked steak to the skillet, stirring to coat it in the sauce. Cook until the steak is heated through for about 1-2 minutes.
  7. Garnish with green onions and sesame seeds. Serve warm.
