Beef Liver Pâté Recipe

This Beef Liver Pâté recipe is well suited for Carnivore Diet followers. Fresh Beef Liver and shallots are sautéed in brown butter, then blended with fresh thyme, Irish grass fed butter and a dash of Irish whiskey. This is a great way for anyone wanting an alternative way of eating liver.

Ingredients
- 1 lb fresh beef liver preferably organic or grass fed.
- 6 oz shallots 2 medium
- 12 oz buttermilk
- 4 oz butter I recommend Irish grass fed.
- 2 tbsp whisky see ingredient alternatives in the post
- 1 tbsp thyme
Instructions
- Wash, pat-dry and slice the liver into uniform strips or chunks.
- Place the liver in a non metallic dish and pour buttermilk over it.
- Stir the liver to mix well into the buttermilk and leave it for about 2 hours at room temperature.
- Peel and chop the shallots into uniform pieces, either slices or chunks.
- After a couple of hours, remove the liver from the buttermilk, rinse the liver in cold water and pat dry.
- In a pan, add a third of the butter and allow to brown (extra flavor), add liver and shallots and sauté (do not fry, lower your heat to a gently sizzle.)
- When the liver is sautéing, remove the fresh thyme leaves from the stems.
- The liver is ready when it reaches an internal temperature of 160 degrees F. / 71 degrees C.
- Place the liver and shallots into the bowl of a food processor. Add cubes of another third of the butter, the fresh thyme leaves and the whiskey. Blend well.
- Transfer the Pâté into a ceramic terrine mold, glass jars or any non metal container of your choice.
- Melt the remaining third of butter and spoon over the top of the Pâté to act as a seal. Cover the Pâté and chill for at least 4 hours in the refrigerator.
