Description
Beef Queso Dip starts with browning ground beef seasoned with Creole seasoning, chili powder, and cumin, which imparts a mildly spiced, savory flavor. After draining excess fat, Velveeta and shredded Monterey Jack cheese are melted into the pan, creating a creamy and rich cheese sauce. Stirring the cooked beef back in along with freshly chopped cilantro creates a hearty dip with layers of flavor. Ingredients
- 1 tablespoon olive oil
- 8 ounces ground beef
- 1 teaspoon creole seasoning Emeril's Essence brand
- ½ teaspoon chili powder
- ½ teaspoon cumin
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- 8 ounces Velveeta cheese cubed
- ½ cup Monterey jack cheese shredded
- ½ cup diced tomatoes canned
- ¼ cup green chiles canned chopped
- ¼ cup salsa verde
- 2 tablespoons cilantro fresh, chopped leaves
Instructions
- Heat olive oil in a saucepan over medium high heat. Add ground beef, Emeril's Essence, chili powder, cumin, salt and pepper, to taste. Cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat and transfer to a plate.
- Add VELVEETA® to the saucepan, stirring until melted. Stir in Monterey Jack cheese, diced tomatoes, green chiles and salsa verde until well combined.
- Stir in ground beef and cilantro until heated through, about 1-2 minutes.
- Serve immediately.
Notes
- Reheat the dip in the microwave in 30-second intervals, stirring well after each to prevent scorching.
- Add a splash of milk when reheating if the dip becomes too thick to restore a smooth texture.
