Description
This Berry Crisp begins with fresh assorted berries tossed with sugar, flour, and the zest of one orange for fragrance and brightness. The mixture is poured into a baking dish as the base layer. The topping blends flour, baking powder, baking soda, salt, quick-cooking oats, and light brown sugar, combined with melted butter to create a crumbly texture. This is spread evenly over the berries.

Ingredients
For the filling:
- 6 cups berries fresh, assorted
- ⅓ cup sugar
- ⅓ cup flour
- orange zest of 1
For the topping:
- ⅔ cup flour
- ¼ teaspoon baking powder
- ¼ teaspoon baking soda
- Pinch salt
- ⅔ cup oats quick-cooking
- ⅔ cup light brown sugar
- 6 tablespoons butter melted, unsalted, Challenge brand
Instructions
- Preheat oven to 350°F.
- In a large bowl, stir together the berries with the ⅓ cup sugar, ⅓ cup flour, and orange zest. Pour the mixture into a 2-quart baking dish. Set aside.
- In a medium bowl, stir together the flour, baking powder, baking soda, salt, oats, and brown sugar. Drizzle in the melted Challenge butter and stir until the dry ingredients are moistened. Sprinkle the crumb mixture evenly over the top of the berry filling.
- Bake for 45-50 minutes or until the topping is golden brown and the filling is bubbly.
Notes
- Frozen mixed berries (32 ounces) can be used; thaw and drain excess juice before baking to prevent sogginess.
