Description

The Strawberry Pie Filling recipe starts by pureeing part of the fresh strawberries with sugar, boiling water, and cornstarch to thicken. Cooking this mixture until it boils for three minutes results in a thick, jam-like glaze that clears up as it heats. Removing from heat and adding vanilla extract adds a subtle aromatic note.

The remaining berries are halved or quartered and folded in to provide whole fruit texture and contrast within the smooth glaze. This combination offers a pleasing mix of thick, coated berries and fruit pieces, ideal for pie filling or a chilled topping.

This filling is best used fresh and refrigerated for up to two days. Storing it in airtight containers helps maintain its quality. Avoid freezing as it may adversely affect texture. Although fresh berries are recommended, frozen berries are not suitable for this recipe, and a separate strawberry sauce recipe is suggested instead.

  • 2 pounds strawberry tops removed, divided use, fresh
  • ¾ cup granulated sugar
  • 1 cup water boiling
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Place 1 ½ cups of the berries into the bowl of a food processor or blender and puree. Add the sugar, boiling water, and cornstarch and blend until smooth.
  2. Pour the mixture into a medium saucepan and bring to a boil over medium heat, stirring constantly. Once the mixture starts to boil, continue to boil for 3 minutes, stirring constantly. The mixture will be very thick and should become less cloudy and more jam-like as it cooks.
  3. After 3 minutes, remove from the heat. Stir in the vanilla extract and allow the glaze to cool while you prepare the rest of the strawberries.
  4. Halve or quarter the remaining berries. Fold into the glaze to thoroughly coat.
  5. Pour into a pie crust or chill the filling in the refrigerator until ready to serve. Stir well before using as a topping.

Notes

  • Prepare about 6 cups of pie filling and store in the refrigerator for up to 2 days for best quality.
  • Use only fresh strawberries as frozen berries are not recommended for this recipe.
  • Do not freeze the prepared pie filling, as freezing can negatively affect texture and flavor.
  • Control the serving temperature by chilling the filling until ready to use; stir well before serving or assembling pies.
