From the basil to the cherry tomatoes and the fresh mozzarella cheese, this caprese salad is packed full of fresh ingredients. It’s one of the easiest recipes using fresh mozzarella.

Ingredients
- 1 ½ lbs tomatoes sliced, ripe
- 12-16 oz fresh mozzarella sliced
- 1/3 cup basil fresh leaves
Dressing
- 3 tbsp extra virgin olive oil for drizzling
- 1/2 tsp salt or to taste, sea salt
- 1/4 tsp black pepper or to taste
- 2 tbsp balsamic glaze
Instructions
- In a small bowl, mix together the olive oil and balsamic glaze and set aside.
- On a flat plate, layer the tomato slices in between the slices of mozzarella.
- Tuck the basil leaves in between the tomato and mozzarella slices. Alternatively, you can spread them evenly on top of the slices.
- Drizzle the oil and glaze mixture over the cheese, tomato and basil, and then sprinkle the salt and pepper over everything. Serve immediately and enjoy!
