  • 2 cups pork cooked, shredded, or chicken or ground beef
  • 8 oz Mexican cheese *shredded
  • 2 cups black beans *drained and rinsed
  • 2 bell pepper diced, any colors
  • 1 avocado *diced
  • sour cream for garnish
  • salsa
  • guacamole
  • cilantro lime ranch sauce

Instructions

  1. Spread chips into an even layer on a cookie sheet or in a large cast iron skillet.
  2. Spread meat evenly over chips.
  3. Sprinkle beans and peppers over meat.
  4. Spread shredded cheese evenly on top.
  5. Place in preheated oven, 350 degrees F, and bake 15 minutes, or until cheese has melted.
  6. Remove from oven and add avocados and and garnish desired.
  7. Serve and enjoy!
