Maple roasted carrots are a delicious side for roast chicken.

Ingredients
- 2 pounds carrots
- 4 garlic cloves
- 2 Tablespoon olive oil
- salt and pepper to taste
- 2 Tablespoon maple syrup

Instructions
- Heat the oven to 400 degrees F.
- Cut the carrots into slices, and mince the garlic.
- Toss the carrots and garlic with the olive oil and add salt and pepper to taste.
- Roast the carrots in the preheated oven for 30 minutes, stirring once or twice.
- Drizzle with maple syrup and sprinkle with parsley
