Bisquick Chicken Pot Pie

Bisquick Chicken Pot Pie is an easy, but hearty and flavorful dish that combines the convenience of a premade baking mix with a creamy and savory chicken and vegetable filling. Then, the top of the biscuit layer is brushed with melted butter and garnished with parsley. It is sure to be devoured in no time!

Filling

  • 2 tablespoons butter unsalted
  • 1 medium yellow onion diced (about 1 cup
  • 1 can cream of chicken soup 10.5 ounces
  • 1 can cream of potato soup 10.5 ounces
  • 3 cups rotisserie chicken shredded, 420 g
  • 1 bag mixed vegetables frozen, 32 ounces
  • 2 teaspoons chicken bouillon powder or 2 chicken bouillon cubes
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder

Topping

  • 3 cups Bisquick Mix storebought or homemade, 360 g
  • 1 cup whole milk 245 g

Garnish

  • 1 tablespoon unsalted butter melted
  • parsley chopped for garnish

Instructions

  1. Preheat oven to 400°F.

Filling

  1. In a large oven-safe skillet over medium heat, melt butter. Add onion and cook for 4-5 minutes, or until the onion softens.
  2. Add cream of chicken, cream of potato, chicken, frozen vegetables, bouillon powder, pepper, and garlic powder. Stir to combine, heating until warmed through (3-5 minutes).
  3. Remove from heat.

Topping

  1. To a medium bowl, add Bisquick™ and milk. Stir to combine. Evenly spread over the hot filling.
  2. Bake 40-45 minutes, or until the top is golden brown.
  3. Before serving, brush the top of the biscuits with melted butter and garnish with parsley. Serve warm.
