Bissap

A recipe for Bissap from the cookbook, Saka Saka. This refreshing drink is flavored with dried hibiscus, cinnamon, vanilla, and mint.

Ingredients

  • 4 cups (1 liter) water
  • 1 1/4 cups (50 grams) dried bissap (hibiscus) flowers
  • 2/3 cup (150 grams) sugar
  • 1 cinnamon stick
  • 1 vanilla bean
  • 1 bunch mint

Instructions

  1. Bring 4 cups (1 liter) water to a boil.
  2. Add the bissap flowers, sugar, and cinnamon stick.
  3. Split the vanilla bean in half lengthways and scrape the seeds into the pot. Add the empty vanilla bean and cook for 15 minutes.
  4. Turn off the heat and add the mint. Cover and leave to infuse for 10 minutes.
  5. Strain the mixture through a fine sieve and pour the infusion into a jug.
  6. Keep the bissap in the fridge for a week. Serve chilled.
