Bissap (Wonjo Juice)

Bissap is a drink made from Hibiscus flowers. It is known by several names in Africa, the Caribbean and Mexico.

Ingredients

Servings
  • 8 oz. dried hibiscus flowers , wonjo leaves
  • 2 quarts water
  • 10 mint leaf fresh
  • ¼ teaspoon peppermint extract natural
  • 1 cup sugar , more or less to taste
  • 3 teaspoons lime juice , freshly squeezed
  • ice cubes , optional

Equipment

  • Very fine mesh strainer
  • Large saucepan with lid

Instructions

  1. Rinse the hibiscus leaves with clean water and place them in a large saucepan.
  2. Add the water and bring to a boil. Cover and cook over low to medium heat for 10 minutes.
  3. Turn off the heat, add the mint leaves, cover and leave to infuse for 10 minutes.
  4. Filter using a very fine mesh strainer.
  5. Add the sugar and stir until the sugar is completely dissolved.
  6. Let cool completely.
  7. Serve very cold, with or without ice cubes.
