Ingredients
- 4 6-ounce cod fillets
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon kosher salt
- 2 tablespoons olive oil
Instructions
- In a small bowl, mix together smoked paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, black pepper, and kosher salt to create the blackening spice blend.
- Pat the cod fillets dry with paper towels, then rub each fillet evenly with the spice blend, pressing gently to adhere.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned cod fillets and cook for 3-5 minutes on each side or until the fish develops a dark, crispy crust and flakes easily with a fork.
