  • 8 ounces cavatappi pasta cooked al dente according to package instructions
  • 1 pound Shrimp raw, deveined, tail removed, large
  • 2 tablespoons blackened seasoning
  • 1 tablespoon butter unsalted
  • 1 cup heavy cream
  • 2 tablespoons tomato paste
  • ¼ cup sour cream 57.5 g
  • ½ cup Parmesan Cheese grated
  • 1 can sweet corn drained, 15 ounces
  • green onion chopped, for garnish

Instructions

  1. Add cavatappi noodles to a pot of boiling salted water. Cook al dente according to package directions (8-9 minutes for cavatappi).
  2. While the noodles are cooking, prepare the shrimp and sauce.
  3. Season the shrimp evenly with blackened seasoning. Set aside.
  4. In a large skillet over medium-high heat, melt the butter. When melted, add the shrimp in a single layer and cook for 4-6 minutes, flipping halfway through. Transfer shrimp to a plate and set aside.
  5. To the same skillet over medium heat, add heavy cream. Bring the heavy cream to a low simmer, scraping up the brown bits from the bottom of the pan as you go.
  6. Reduce the heat to low and add tomato paste, sour cream, and parmesan. Stir together until the parmesan is completely melted.
  7. Add the cooked pasta, shrimp, and corn to the sauce. Toss to coat.
  8. Garnish with parsley and serve.
