If you are looking for a super easy side dish that packs a ton of flavor then this BLT Salad is going to be your new favorite summer recipe!

Ingredients
- 1 pound Bacon
- ½ red onion
- 4 cups mixed greens
- 1 cup cherry tomatoes cut in half
- 1 cup Monterey jack cheese shredded
- Avocado Ranch Dressing to taste
Instructions
- Place a large skillet over medium heat. Cook bacon until crispy, flipping as needed. Transfer to a paper towel-lined plate to drain. Once cool enough to handle, chop the bacon into small pieces.
- Dice or chop the red onion. Run the onion pieces under cool water for 1 minute and then pat dry with a paper towel.
- Place the lettuce in a large serving bowl. Top with bacon, onion, tomatoes, and cheese. Toss together.
- When ready to serve, top the salad with dressing and toss again.
Notes
- Nutrition includes 2 tablespoons of dressing per serving.
