One of my favorite easy to make, sweet and savory, rice salads!

Ingredients
Blueberry Basil Salad
- 1 pre-portioned bag Minute Multi-Grain Medley
- 1 Cooked Chicken Breast diced
- 1/2 cup fresh blueberries
- 1/4 cup crumbled goat cheese
- 1 tablespoon fresh basil chopped
Honey-Balsamic Vinaigrette
- 2 tablespoons balsamic vinegar
- 2 tablespoons water
- 2 teaspoons extra virgin olive oil
- 2 teaspoons honey
- 1 teaspoon Dijon mustard
- 1/4 teaspoon kosher salt
- 1/8 teaspoon garlic powder
- Black pepper to taste
Instructions
- Cook the Minute Multi-Grain Medley in the microwave according to package instructions.
- Let the rice cool to room temperature then add in the chicken, blueberries, basil, and goat cheese.
- In a small bowl or jar, whisk or shake all of the vinaigrette ingredients together until well combined.
- Pour the desired amount of dressing over the salad then fold everything together with a spoon.
- Serve immediately or cover and refrigerate until ready to serve.
