Ingredients

Blueberry Basil Salad

  • 1 pre-portioned bag Minute Multi-Grain Medley
  • 1 Cooked Chicken Breast diced
  • 1/2 cup fresh blueberries
  • 1/4 cup crumbled goat cheese
  • 1 tablespoon fresh basil chopped

Honey-Balsamic Vinaigrette

  • 2 tablespoons balsamic vinegar
  • 2 tablespoons water
  • 2 teaspoons extra virgin olive oil
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon garlic powder
  • Black pepper to taste

Instructions

  1. Cook the Minute Multi-Grain Medley in the microwave according to package instructions.
  2. Let the rice cool to room temperature then add in the chicken, blueberries, basil, and goat cheese.
  3. In a small bowl or jar, whisk or shake all of the vinaigrette ingredients together until well combined.
  4. Pour the desired amount of dressing over the salad then fold everything together with a spoon.
  5. Serve immediately or cover and refrigerate until ready to serve.
