Blueberry Cream Cheese Pie

Delicious homemade blueberry sauce tops this creamy no bake cream cheese pie. Delicious ending to any meal and adaptable for low carb followers for a sugar free version.

PIE CRUST

  • 1 1/4 cups Graham cracker crumbs
  • 3 tablespoons granulated sugar
  • 1/3 cup butter melted

CREAM CHEESE FILLING

  • 12 ounce low-fat cream cheese room temperature
  • 1 cup 0% fat plain greek yogurt I use Fage
  • 1/3 cup powdered sugar or sugar free alternative
  • 2 teaspoons vanilla
  • 1 1/2 cup whipping cream whipped
  • [Homemade Blueberry Sauce]
  • whipped cream for topping optional

Instructions

  1. In a medium bowl whisk together graham cracker crumbs and sugar. Stir in melted butter until blended. Pat crumbs into a 9-inch pie pan pressing firmly on the bottom and up the sides. Put in the refrigerator and let set for one hour.
  2. In a large bowl beat together cream cheese, yogurt, sugar and vanilla extract. Set a side.
  3. In another bowl whip cream until fluffy and soft peaks form.
  4. Fold whipped cream into the cream cheese mixture. Pour all ingredients into prepared pie shell and refrigerate overnight or for a minimum of two hours. Top with blueberry sauce and additional whipped cream if desired.

Notes

  • You can use a purchased pie crust in place of making your own. In addition, an 8 ounce pre-made whipped topping can be substituted for whipped cream.

  • CRUST - place in the freezer to set quicker.
