Blueberry Sheet Cake

This Lemon Blueberry Sheet Cake perfectly balances sweet and tart. The cake is moist, bursting with fresh blueberries, and then is finished with lemon frosting.

Ingredients

Cake

  • ¾ cup salted butter room temperature
  • 2 cup white granulated sugar
  • 4 large eggs
  • ½ cup lemon juice
  • ½ cup plain greek yogurt
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 ½ cups fresh blueberries

Frosting

  • 1 cup unsalted butter room temperature
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 3 ½ cups powdered sugar

Instructions

  1. Preheat the oven to 350°F.
  2. Use an electric hand mixer or kitchen-aid stand mixer to cream the butter and granulated sugar together for 3-5 minutes, or until the sugar is completely dissolved.
  3. Add the eggs and continue whisking for 2 more minutes. Once the eggs are incorporated, mix in the yogurt, lemon juice, and vanilla extract.
  4. Slowly mix in the flour, baking powder, and baking soda until the wet and dry ingredients are combined. Make sure the cake batter is smooth and has no clumps of dry ingredients in it.
  5. Add the blueberries and fold gently into the batter.
  6. Pour your cake batter into the 9x13 inch pan and bake for 45 minutes, or until the edges of the cake begin to turn golden brown. After the cake is finished baking, allow it to cool on the counter for 45 minutes, or until the top of the cake is no longer hot to the touch.
  7. Once the cake is finished cooling, whisk all of the frosting ingredients together in a large mixing bowl until smooth and creamy. Spread the frosting over the top of the cake using a large spoon or spatula.
  8. Slice, serve and enjoy!

Notes

  • For a stronger lemon flavor, add zest to the batter, frosting, or both.
  • Ensure the cake is completely cooled before adding the frosting so it doesn’t melt.
  • Make sure to mix just to combine all the ingredients once you add the flour to the wet ingredients. Over-mixing may cause the cake to toughen up.
