Description
This recipe starts by cooking tapioca pearls in boiling water until they float and then simmer for 20 minutes, followed by a 25-minute steeping period covered off heat. After cooling and rinsing, the pearls are mixed with brown sugar and honey to create a sweet boba base.
Three smoothie variations use frozen honeydew melon, strawberries, or mango blended with coconut milk and added sugar, resulting in smooth, fruity drinks with creamy texture. The sweet boba pearls are evenly portioned into glasses and topped with the respective smoothie blend.
The combination yields a contrast between the cool, smooth fruit drink and the soft, chewy boba pearls. Coconut milk contributes a rich mouthfeel that complements the natural fruit flavors.
Ingredients
- 1 cup tapioca pearls
- 6 cups water
- 2 tablespoons brown sugar
- 2 tablespoons honey
- 2 cups coconut milk You may need to add more depending on the strength of your blender.
- 2 tablespoons sugar
Honeydew
- 4 cups honeydew melon cut into small pieces, frozen
Strawberry
- 4 cups strawberry frozen
Mango
- 4 cups Mango frozen
Instructions
- Bring 6 cups of water to a boil. Add tapioca pearls and stir until all the pearls float to the top. Turn down the heat and cook for 20 minutes, stirring every 2-3 minutes. Remove the pot from the heat and cover. Let the pearls sit, covered, for 25 minutes. Do not open the lid.
- Pour the pearls into a strainer and rinse with cold water until the pearls are cool to the touch.
- Place pearls in a bowl and add brown sugar and honey. Stir to combine.
Honeydew Melon Smoothie
- Blend the honeydew, coconut milk, and sugar in a blender until smooth.
- Evenly distribute the sweet boba mixture between 4 glasses. Pour smoothie over the top.
Strawberry Smoothie
- Blend the frozen strawberries, coconut milk, and sugar in a blender until smooth.
- Evenly distribute the sweet boba mixture between 4 glasses. Pour smoothie over the top.
Mango Smoothie
- Blend the frozen mangos, coconut milk, and sugar in a blender until smooth.
- Evenly distribute the sweet boba mixture between 4 glasses. Pour smoothie over the top.
