Peach Glaze

  • ¾ cup peach preserves 240 g
  • ¼ cup bourbon 56 g
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons mustard Dijon, coarse ground
  • 2 teaspoons garlic minced
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes

Shrimp

  • 1 pound Shrimp peeled, deveined, tails-on, large, uncooked
  • 1 teaspoon kosher salt
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter unsalted
  • 2 medium peach pitted, thinly sliced
  • parsley for garnish

Instructions

Peach Glaze

  1. In a medium bowl, combine peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, black pepper, and red pepper flakes. This will yield approximately 1 ½ cups of glaze. Set aside while you prepare the shrimp and peaches.

Shrimp

  1. In a medium bowl, toss shrimp with salt.
  2. To a large skillet over high heat, add olive oil and butter. Once the oil is hot and the butter has melted, add the shrimp to the skillet. Cook for about 2-3 minutes on each side, or until seared on the surface. Avoid overcooking to prevent a rubbery texture. Transfer the cooked shrimp to a plate and tent to keep warm.
  3. To the same skillet over medium-high heat, add the sliced peaches. Cook for about 3-4 minutes, stirring occasionally, until the peaches start to soften and caramelize.
  4. Remove skillet from heat. Pour the peach-bourbon sauce over the peaches. Stir gently to combine, coating the peaches with the sauce. Return to heat to cook for an additional 3-4 minutes, or until the sauce is heated through and thickens. Add seared shrimp.
  5. Garnish with parsley and serve.
