Ingredients

  • 8 lices white bread see notes, hearty
  • 3 tablespoons neutral cooking oil generic cooking oil
  • 1 teaspoon mustard seeds
  • teaspoon asafoetida
  • ½ teaspoon Turmeric
  • 20 curry leaves
  • 2 green chilies slit lengthwise
  • 1 laqrge yellow onion finely diced
  • 1 teaspoon kosher salt
  • 2 tablespoons water
  • ½ lemon juiced
  • ½ cup cilantro finely chopped
  • 1 teaspoon sugar optional

Instructions

  1. Cut the bread slices into 1-inch pieces and reserve.
  2. In a large wok or pan heat oil. Once the oil is shimmering hot add mustard seeds and allow them to splutter. Lower the heat and add hing, turmeric, curry leaves, and green chilies. Give a quick stir.
  3. Add diced onion and salt. Mix well and cook covered on medium heat for 3 to 4 minutes or until the onions become soft and translucent.
  4. Add cubed bread and sugar. Mix well. Sprinkle 2 tablespoons of water and cook covered on low heat for 5 minutes. Add lemon juice and garnish with cilantro.

Notes

  • Use slightly stale hearty white bread like Arnold Country white bread for best texture.
  • Vegetables such as tomatoes, carrots, and green peas can be added after onions to enhance the dish.
