Broccoli & Cheese Soup
Description
This Broccoli & Cheese Soup begins by sautéing diced onions in butter until tender, then whisking in flour to create a roux that thickens the soup. Gradually adding half-and-half and chicken broth forms a creamy and smooth soup base. Seasoned with kosher salt and freshly ground pepper, the base is simmered slowly to develop flavor and texture.
Chopped broccoli, carrots, and celery are simmered until tender but still slightly firm, lending subtle sweetness and body. The soup finishes with the addition of shredded mild cheddar and cubed Velveeta cheese melted gently to form a rich, smooth cheese blend that coats the vegetables and soup base.
Serve this soup warm as a comforting snack or light meal, suitable alongside crusty bread or a simple salad. Adjust thickness by adding more broth to preference.
Ingredients
- 6 tablespoons butter
- ½ cup onion diced
- 5 tablespoons all-purpose flour
- 2 cups half-and-half
- 3 cups chicken broth
- 1 teaspoon kosher salt
- ½ teaspoon black pepper freshly ground
- 4 ½ cups broccoli chopped
- 3 carrot diced, medium
- 3 celery diced, medium stalks
- 8 ounces mild cheddar cheese shredded
- 8 ounces processed cheese cubed, Velveeta brand
Instructions
- Melt butter in a large pot over medium heat. Stir in onion and saute until tender, about 3 to 4 minutes.
- Whisk in flour and continue to stir until the mixture turns golden brown, this should take about 5 minutes.
- Slowly whisk in half-and-half to onion mixture, stirring until the mixture is smooth. Add chicken broth, salt and pepper.
- Reduce heat to low to medium heat and simmer until thickened. This will take about 10 minutes.
- Add broccoli, carrots, and celery. Simmer for an additional 15-20 minutes, or until the veggies are tender, but still have a bit of bite to them.
- Reduce heat to low. Add cheddar cheese and Velveeta to soup and cook, stirring occasionally, until the cheese melts and the soup is smooth and creamy, about 10 minutes.
- Give the soup a taste and add additional salt and pepper if necessary.
- If you prefer a thinner soup, you can add a bit more chicken broth until you reach the desired consistency.
