Description

The soup begins by preparing enoki mushrooms, washing and separating them after removing their roots. Garlic is then sautéed in neutral cooking oil until fragrant, and ketchup is added to create a slightly sweet and tangy base with mildly caramelized notes. Water or stock is poured in to form the broth, which is brought to a boil. Fresh enoki mushrooms are added and cooked briefly for about a minute to soften without losing their delicate crunchiness.

To finish, the soup is garnished with green onions or coriander and a few drops of sesame oil, introducing a nutty aroma and flavor contrast. An optional Thai chili can be added to introduce a mild heat that complements the overall lightness.

  • 1/2 pound enoki mushroom with roots removed, you will not get too much left, fresh
  • 2 garlic finely chopped, cloves
  • 3 tablespoons ketchup
  • 1 Thai Chili pepper , optional
  • 1 tablespoon neutral cooking oil generic cooking oil
  • 2 sesame oil drops
  • salt to taste
  • 1/2 cup of water , or stock if you prefer
  • green onion or coriander for garnishing

Instructions

  1. Remove the roots of mushrooms and then separate by hand. Wash and drain.
  2. Heat up cooking oil in wok on medium heat; add garlic to stir fry until aroma. Add ketchup in to stir fry until the oil begins to turn slightly red too.
  3. Pour the water in. Bring all the content to a boiling. Sprinkle the mushrooms in. Continue cook for around 1 minute.
  4. Transfer out, garnish with green onion or other garnishing you like,drop sesame oil and serve hot!
