Broccoli Cheese Soup

Broccoli Cheese Soup blends tender broccoli and shredded carrots into a creamy base made from butter, flour, chicken broth, and milk, thickened and enriched with sharp cheddar cheese. The soup balances savory and slightly nutty flavors with subtle aromatics like garlic and nutmeg, yielding a comforting and hearty texture suitable for a filling meal or starter.

Description

This Broccoli Cheese Soup begins by sautéing diced onion and minced garlic in melted butter until softened, creating a fragrant base. Flour is sprinkled and cooked to form a roux, which thickens the soup when liquids are added. Chicken broth and whole milk are gradually stirred in to form a smooth and creamy broth.

Chopped broccoli and shredded carrots are simmered in the broth until tender, imparting both texture and mild sweetness. The soup is then gently removed from heat to stir in shredded sharp cheddar cheese in increments, melting it fully into the soup to build richness and depth without curdling.

The seasoning includes salt, black pepper, and a touch of nutmeg, adding warmth and subtle spice. The finished soup is smooth but not overly creamy, with tender vegetable pieces throughout and a balanced cheesy flavor. Serve hot for a warm, satisfying bowl suitable as a lunch or starter to a larger meal.
