Bruschetta Chicken

Ingredients

Servings
  • 1 fresh mozzarella ball (sliced into 4 thin pieces)

Chicken Marinade

  • 4 boneless chicken breasts
  • ¼ cup balsamic vinegar
  • 2 tablespoon olive oil
  • 1 tablespoon honey
  • 2 tablespoon garlic (minced)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Bruschetta Topping

  • 4 large tomatoes (seeded and finely diced, roma)
  • ½ small red onion (finely minced)
  • 2 cloves garlic (finely grated)
  • 1 tablespoon olive oil
  • 8 - 10 fresh basil leaves (julienned)
  • 1 tablespoon fresh parsley (chopped)
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Balsamic Glaze (Homemade or Store-bought)

  • ½ cup balsamic vinegar
  • 2 teaspoon brown sugar

Garnish

  • Parmesan Cheese
  • fresh basil leaves

Instructions

  1. In a medium sized bowl add all of the bruschetta topping ingredients. Mix until evenly combined. Set aside in the fridge while you prepare the chicken.
  2. In a large Ziploc bag or container add all of the marinade ingredients. Mix until evenly combined. Add in the chicken breast and mix until evenly coated.
  3. Preheat grill/BBQ to 375ºF. See notes for oven baking, pan frying or air fried cooking method.
  4. Remove the chicken from the marinade and allow the excess marinade to drip off the chicken and then place on the hot grill.
  5. Grill the chicken over direct heat for 4-5 minutes, or until grill marks have browned. Brush the chicken with remaining marinade and then flip the chicken. Grill for an additional 4-5 minutes over direct heat or until grill marks have browned.
  6. Move the chicken to the other side of the grill over indirect heat and allow them to cook for an additional 8 - 10 minutes.
  7. When the chicken is almost fully cooked, approximately 155ºF – 160ºF, add a slice of fresh mozzarella cheese on the center of each piece of chicken. Cook for an additional 3-4 minutes or, until the chicken reaches 165ºF and the mozzarella cheese has melted. Transfer the chicken to a plate and cover with foil. Allow to rest for 5 minutes.
  8. If using homemade balsamic glaze, add the balsamic vinegar and sugar to a small saucepan over medium high heat. Bring to a boil. Once boiling reduce heat to low and simmer for 8 - 10 minutes or until thickened.
  9. Transfer the chicken to a serving platter. Spoon the bruschetta topping over each piece of chicken and drizzle balsamic glaze over top. Serve and enjoy!

  • Transfer the chicken to an oven safe baking dish. Bake the chicken at 450°F for about 15-20 minutes, or until internal temperature reaches 165°F. Top the chicken with the cheese and cover the baking dish with foil. Rest for 5 minutes.

  • Heat a skillet or frying pan with 1 tablespoon of oil. Pan fry the chicken on each side for 5 - 7 minutes, or until internal temperature reaches 165°F. Top the chicken with the cheese and cover the pan with the lid or foil. Rest for 5 minutes.
  • Air Fryer Cooking Method
  • Air Fryer Cooking Method
  • Preheat Air Fryer to 375°F. Transfer the chicken to the air fryer and cook for 7-8 minutes. Flip the chicken and cook an additional 7-8 minutes. Cooking time may vary depending on the model or your air fryer and thickness of the chicken. Check the chicken temperature (must reach 165°F) and cook for an additional 2-3 minutes at a time between temperature checks.
