Buffalo Chicken Soup

Buffalo Chicken Soup delivers a creamy, spicy bowl combining shredded rotisserie chicken with fire-roasted tomatoes, corn, beans, buffalo sauce, and salsa verde. The addition of cream cheese and cheddar melts into the broth for richness, while garnishes like jalapeño, sour cream, and cilantro add fresh heat and creaminess. This soup offers comforting warmth with a balanced spicy tang and hearty texture.

Description

This Buffalo Chicken Soup starts by sautéing diced onion and minced garlic in vegetable oil until soft and translucent. Then chicken broth is added along with shredded rotisserie chicken, drained fire-roasted diced tomatoes, sweet corn, great northern beans, buffalo sauce, salsa verde, and dried oregano. The mixture simmers for about 15 minutes to meld flavors.

Reducing heat, cubed cream cheese and shredded cheddar are stirred in and cooked until melted, enriching the soup's texture with a creamy consistency. Salt and freshly ground black pepper are adjusted to taste. The finished soup combines spicy, tangy buffalo flavor with the heartiness of chicken and beans.

The soup is served garnished with diced jalapeño, dollops of sour cream, and chopped fresh cilantro to add contrast in heat, coolness, and herbal brightness. This combination creates a well-rounded spicy chicken soup perfect for warming meals or casual dinners.
