Sloppy Joe

  • 2 pounds ground beef
  • 1 small yellow onion chopped (about ½ cup
  • 1 ½ cups ketchup
  • 2 teaspoons yellow mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 cup water

Biscuits

  • 2 ½ cups all-purpose flour
  • 4 teaspoons baking powder
  • 2 teaspoons kosher salt
  • 2 cups buttermilk
  • ½ cup unsalted butter melted

Topping

  • 1 tablespoon unsalted butter melted
  • parsley chopped, for garnish

Instructions

Sloppy Joe

  1. Preheat oven to 450°F.
  2. To a 13-inch oven-safe skillet over medium heat, add the ground beef and onion. Cook until the beef is no longer pink (8-10 minutes). Drain the excess grease.
  3. Stir in the ketchup, mustard, garlic powder, salt, pepper, and water. Mix until well combined. Set aside while you prepare the biscuit layer.

Biscuits

  1. In a medium bowl, whisk the flour, baking powder, and salt.
  2. Pour in the buttermilk and stir until the batter is mostly combined, being careful not to overwork the batter.
  3. Dollop biscuit dough on top of the sloppy joe mixture. Carefully spread the dough to create an even layer.
  4. Drizzle the melted butter evenly over the top of the biscuit layer. Bake for 20-25 minutes, or until the biscuits are golden brown and cooked through.
  5. Before serving, brush the top of the biscuits with additional melted butter and garnish with parsley. Serve warm.
