This crunchy cabbage and arugula salad is creamy, naturally sweet, and has a lovely nutty bite from arugula. It's seasoned with mayo and curry powder to bring all the flavors together!

Ingredients
- 8 mini tomatoes 240 grams, Luna sweet cocktail tomatoes or mini tomatoes, quartered
- ¼ white cabbage 320 grams, small, finely shredded, core cut out
- 2 cups arugula 55 grams
- 1 cup Bread and butter pickles 163 grams, quartered
- ½ cup feta cheese 65 grams, crumbled
- 3 tablespoons mayonnaise
- 1 teaspoon curry powder
- salt optional, to taste
- black pepper optional, to taste
Instructions
- Add the vegetables, bread and butter chips, and cheese in a large serving bowl. Toss to mix.
- Whisk the mayonnaise with curry powder in a small bowl.
- Pour the curry mayo over the salad and toss well to coat all the ingredients—season with a pinch of salt and black pepper to taste (optional).
- Serve and enjoy! Best to let it sit for a few minutes at room temperature to let the flavors melt.
