Cabbage Roll Soup
Description
Starting with sautéing ground pork and beef with garlic and onion until browned, the recipe builds flavor before adding large bite-sized cabbage pieces and continuing to cook them briefly. Uncooked rice, diced tomatoes, tomato paste, brown sugar, beef broth, tomato juice, Worcestershire sauce, bay leaves, salt, and pepper are added to create a richly flavored broth. The soup simmers covered for 20 to 25 minutes until the rice cooks through and the cabbage softens.
The soup offers tender meat and cabbage pieces in a savory tomato broth enhanced with modest sweetness and depth from the brown sugar and Worcestershire sauce. Removing bay leaves before serving ensures no bitter notes remain. It suits a cozy lunch or dinner and can be reheated easily.
Adjusting broth quantity when reheating can help maintain a preferred consistency, as the soup may thicken after refrigeration.
