Cajun Breakfast Skillet

Simplify brunch with my Cajun Breakfast Skillet recipe. Thanks to store bought diced potatoes this breakfast recipe only takes 30 minutes to make and uses fresh Andouille Sausage, green bell peppers and of course Cajun seasoning.

Ingredients

  • 1 tablespoon grapeseed oil
  • 12 oz. andouille sausage sliced
  • ½ green bell pepper diced
  • 20 oz. diced potatoes Simply Potatoes brand
  • 20 oz. onion Simply Potatoes brand
  • 1 teaspoon Cajun seasoning
  • 6 egg
  • salt to taste
  • black pepper to taste

Instructions

  1. Place a skillet (fitted with a lid for later in the recipe) on medium-high heat. Add in the Grapeseed oil, Cajun style andouille sausage, green bell pepper, diced potatoes, and Cajun seasoning into the skillet. Mix well. Let cook 3 minutes, then mix again. Repeat this 4 more times (totaling to 15 minutes or until potatoes are golden brown but not burnt).
  2. Make 6 holes within the potato skillet. Drop each egg into the holes and then place the lid on the skillet. Cook on medium heat for 3-5 minutes until egg whites set and eggs are cooked to your likeness.
  3. Remove the skillet from the heat source. Divide potatoes and eggs evenly among plates and enjoy.

Notes

  • Eggs - To stretch this breakfast you can make additional eggs on the side and top on plates after potatoes are placed on plates.
  • Potatoes - If you don't have the refrigerated potatoes on hand or can't find them. You can always dice and cook fresh potatoes prior to frying.
  • Onions - If you can't find the potatoes with onion then dice a half of an onion and cook with the green bell pepper.
