Ingredients

  • 8 ounces Fettuccine pasta
  • 1 pound broccoli florets cut into small, bite-sized pieces (about 6 cups, fresh

Chicken

  • 4 boneless chicken breasts about 2 pounds, skinless
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons extra virgin olive oil

Cajun Alfredo

  • 2 tablespoons butter unsalted
  • 1 tablespoon garlic minced
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon Cajun seasoning
  • ½ teaspoon red pepper flakes
  • 1 ½ cups heavy whipping cream 357 g
  • 4 ounces cream cheese cubed, ½ block
  • 1 cup Parmesan Cheese shredded, plus extra for garnish, 100 g

Instructions

  1. Bring a large pot filled with salted water to a boil over medium-high heat. Add noodles and cook al dente, according to package directions (8-10 minutes).
  2. In the final 3-4 minutes of boiling the noodles, add the broccoli.
  3. When done, reserve 1 cup of pasta water; drain the rest. Set aside.

Chicken

  1. Season chicken evenly on all sides with cajun seasoning.
  2. To a large nonstick skillet over medium heat, add oil. Once hot, add chicken breasts. Cook chicken for 5 minutes. Then, flip over the chicken, reduce heat to medium-low, and cook for an additional 5 minutes, or until the chicken reaches an internal temperature of 165°F.
  3. Remove from heat. Transfer the chicken to a plate. Tent to keep warm.

Cajun Alfredo

  1. In the same skillet over medium heat, melt the butter. Add garlic and cook for 1 minute.
  2. Mix in salt, pepper, cajun seasoning, red pepper flakes, heavy cream, cream cheese, parmesan, and ½ cup of the reserved pasta water. Whisk together until the cream cheese has melted through and the mixture is creamy.
  3. Add cooked pasta and broccoli, tossing to coat. (If you want a thinner sauce, add more reserved pasta water until desired consistency is reached.)
  4. Slice chicken into strips. Top the pasta with the sliced chicken. Serve with additional parmesan cheese for garnish.
