Ingredients
- 8 ounces Fettuccine pasta
- 1 pound broccoli florets cut into small, bite-sized pieces (about 6 cups, fresh
Chicken
- 4 boneless chicken breasts about 2 pounds, skinless
- 1 tablespoon Cajun seasoning
- 2 tablespoons extra virgin olive oil
Cajun Alfredo
- 2 tablespoons butter unsalted
- 1 tablespoon garlic minced
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 tablespoon Cajun seasoning
- ½ teaspoon red pepper flakes
- 1 ½ cups heavy whipping cream 357 g
- 4 ounces cream cheese cubed, ½ block
- 1 cup Parmesan Cheese shredded, plus extra for garnish, 100 g
Instructions
- Bring a large pot filled with salted water to a boil over medium-high heat. Add noodles and cook al dente, according to package directions (8-10 minutes).
- In the final 3-4 minutes of boiling the noodles, add the broccoli.
- When done, reserve 1 cup of pasta water; drain the rest. Set aside.
Chicken
- Season chicken evenly on all sides with cajun seasoning.
- To a large nonstick skillet over medium heat, add oil. Once hot, add chicken breasts. Cook chicken for 5 minutes. Then, flip over the chicken, reduce heat to medium-low, and cook for an additional 5 minutes, or until the chicken reaches an internal temperature of 165°F.
- Remove from heat. Transfer the chicken to a plate. Tent to keep warm.
Cajun Alfredo
- In the same skillet over medium heat, melt the butter. Add garlic and cook for 1 minute.
- Mix in salt, pepper, cajun seasoning, red pepper flakes, heavy cream, cream cheese, parmesan, and ½ cup of the reserved pasta water. Whisk together until the cream cheese has melted through and the mixture is creamy.
- Add cooked pasta and broccoli, tossing to coat. (If you want a thinner sauce, add more reserved pasta water until desired consistency is reached.)
- Slice chicken into strips. Top the pasta with the sliced chicken. Serve with additional parmesan cheese for garnish.
