Ingredients

  • 4 boneless skinless chicken breast 6-8 ounces
  • 2 tablespoon olive oil
  • 1 tablespoon Cajun Seasoning

For serving

  • 4 hamburger buns
  • ¼ onion thinly sliced
  • 1 large tomato sliced
  • 2 lettuce leaves
  • 2 lices Monterey jack cheese

Cajun Sauce

  • cup plain greek yogurt or sour cream
  • ¼ teaspoon Cajun Seasoning

Instructions

  1. Preheat your oven to 350°F (175°C). Slice the chicken breast in half and then place plastic wrap over the chicken breast slices. Gently pound the chicken with a meat mallet or rolling pin to an even thickness of about ½ inch.
  2. Brush both sides of each chicken breast slice with olive oil and then sprinkle Cajun seasoning evenly over both sides of each piece, gently patting it into the meat.
  3. Place the seasoned chicken breasts in a baking dish. Bake them for 11-13 minutes or until the thickest part reaches an internal temperature of 165°F (74°C). At this point, if you want, you can broil the chicken for 2-3 minutes to brown it.
  4. Combine the Greek yogurt and Cajun seasoning in a small bowl. Mix the ingredients well and then set them aside.
  5. Once cooked, remove the spicy Cajun chicken from the oven and let them rest for 5 minutes.
  6. Assemble your Cajun chicken sandwiches and serve immediately with potato chips, French fries, or onion rings.

Notes

  • Pat your chicken dry: Drying the chicken allows the seasoning to stick to it better.
  • Infuse the Cajun flavor: Let the seasoned chicken sit for 10 minutes before cooking to enhance the flavor.
  • Toast the buns: Toasting the buns adds texture and helps prevent sogginess.
  • Slice onions and tomatoes just before serving: This ensures maximum freshness and flavor retention.
  • Broil for a few minutes: Broil the chicken for 2-3 minutes at the end of cooking to brown it.
