Ingredients

  • 1 pound fresh salmon Cut into 4 fillets
  • 2 teaspoons olive oil
  • 1 shallot
  • 2 Cloves garlic
  • 1 teaspoon ginger
  • ¼ Cup brown sugar
  • 3 Tablespoons fish sauce
  • 1 teaspoon lime juice
  • 1 teaspoon salt

Instructions

  1. Sauté the shallot and ginger in the olive oil for 2-3 minutes over medium heat.
  2. Add in the minced garlic and cook 1-2 more minutes.
  3. Add the remaining ingredients and bring to a simmer, stirring until the brown sugar is dissolved and the caramelized sauce has thickened, about 5 minutes
  4. Add the salmon skin side up and cook for 3 minutes, then flip over and cook for 3 more minutes. Baste the salmon with the sauce and continue to cook until the salmon reaches your desired doneness.
