Ingredients

  • 2 teaspoons vegetable oil
  • 1/3 cup finely diced onion
  • 3 cloves garlic minced
  • 2 teaspoons fresh ginger minced
  • 1 pound lean ground pork
  • 2 1/2 tablespoons brown sugar
  • 2 tablespoons fish sauce
  • 1 red chili pepper finely chopped (optional)
  • 1/4 cup chopped green onions
  • Cooked rice or lettuce leaves for serving

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the diced onion, minced garlic, and minced ginger to the skillet. Sauté for 2 minutes until fragrant.
  3. Add ground pork to the skillet. Cook, breaking it up with a spoon, until browned, about 5 minutes.
  4. Incorporate the brown sugar and fish sauce, then mix to combine.
  5. Increase the heat to high. Spread the pork mixture evenly in the skillet and let it cook without stirring for 2-3 minutes to caramelize. Stir and repeat this process once or twice more to achieve desired caramelization.
  6. Add the finely minced red chili pepper (optional) and sauté for another minute.
  7. Remove from heat. Stir in the chopped green onions.
  8. Serve the caramelized pork immediately, over cooked rice or in lettuce leaves.
