Carne Picada

Ingredients

  • 3 pounds bottom round roast
  • 1/4 cup flour
  • 2 tablespoons chili powder
  • 1 tablespoon kosher salt
  • 2 teaspoons coarse ground black pepper
  • 1 teaspoon cumin
  • 29 ounces diced tomatoes
  • 4 ounces diced green chilies
  • 1 teaspoon sugar

Instructions

  1. Cut the beef roast into 1/2-inch cubes.
  2. Mix the flour, chili powder, salt, black pepper, and cumin.
  3. Toss the meat with the flour and spice mixture.
  4. Add vegetable oil to a large dutch oven on high heat.
  5. Add the beef in batches and brown, about 4-5 minutes per batch.
  6. Add tomatoes, green chilis, and sugar to the pot with the beef.
  7. Stir to mix, cover and simmer on low heat for 90 minutes.
  8. Serve in tacos, burritos, or over rice in burrito bowls.
