  • 2 large eggs room temperature
  • 3/4 cup vegetable oil
  • 1 cup brown sugar
  • 3/4 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped walnuts
  • powdered sugar for sprinkling on top

Instructions

  1. Preheat the oven to 350ºF. Spray an 8×8" baking pan with cooking spray.
  2. In a large bowl, combine the eggs, oil, sugar and vanilla. Mix well. 2 large eggs, 3/4 cup vegetable oil, 1 cup brown sugar, 3/4 teaspoon vanilla extract
  3. Add the baking powder, baking soda, cinnamon and salt into the wet ingredients. Mix until combined. 1 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, pinch of salt
  4. Mix in the flour, stirring until the flour is fully incorporated in, but don't over mix the batter. Fold in the carrots and walnuts using a rubber spatula. 1 1/2 cups all-purpose flour, 1 1/2 cups grated carrots, 1/2 cup chopped walnuts
  5. Spread the cake batter in the prepared pan. Bake for 35-37 minutes until lightly golden brown, until a toothpick or cake tester inserted in the center comes out clean.
  6. Once the cake has cooled, sprinkle powdered sugar on top of the cake and serve. Powdered sugar
