Carrot cake meets coffee cake, and together they are a beautifully tasty concoction you won't be able to resist. A delicious carrot cake base, cream cheese center, and crumb topping.

Cake Layer

  • 2 ¼ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 teaspoon nutmeg
  • 1 tablespoon cinnamon
  • ¾ cup unsalted butter
  • 1 large beaten egg
  • ¾ cup sour cream
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup grated carrots

Cream Cheese Filling

  • 1 egg beaten
  • ¼ cup granulated sugar
  • 1 (8-ounce) package cream cheese

Instructions

To Make the Cake Layer

  1. Preheat oven to 350 degrees Fahrenheit. Grease a 9 inch springform pan with non-stick cooking spray.
  2. In a large bowl combine 2 ¼ cups all-purpose flour, ¾ cup granulated sugar, 1 tablespoon cinnamon, and 1 teaspoon nutmeg. Cut in the ¾ cup unsalted butter using a pastry cutter to form a crumb mixture. Reserve 1 cup of the crumb topping and set aside.
  3. Add 1 large beaten egg, ¾ cup sour cream, ½ teaspoon salt, ½ teaspoon baking powder, 1/2 teaspoon baking soda, and 1 cup grated carrots . Mix well.
  4. Spread the mixture in the bottom of prepared pan, and two inches up the sides.

To Make the Cream Cheese Filling

  1. In a separate bowl combine 1 (8-ounce) package cream cheese, ¼ cup granulated sugar, and 1 egg beaten.
  2. Pour the cream cheese filling over the cake layer.
  3. Sprinkle reserved crumb mixture over the top of the cake, distributing evenly.
  4. Bake for 45 minutes to 1 hour or until a toothpick inserted in center comes out clean.
  5. Cool for at least 30 minutes, preferably overnight in the fridge.
