Ingredients
Cake Layer
- 2 ¼ cups all-purpose flour
- ¾ cup granulated sugar
- 1 teaspoon nutmeg
- 1 tablespoon cinnamon
- ¾ cup unsalted butter
- 1 large beaten egg
- ¾ cup sour cream
- ½ teaspoon salt
- ½ teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup grated carrots
Cream Cheese Filling
- 1 egg beaten
- ¼ cup granulated sugar
- 1 (8-ounce) package cream cheese

Instructions
To Make the Cake Layer
- Preheat oven to 350 degrees Fahrenheit. Grease a 9 inch springform pan with non-stick cooking spray.
- In a large bowl combine 2 ¼ cups all-purpose flour, ¾ cup granulated sugar, 1 tablespoon cinnamon, and 1 teaspoon nutmeg. Cut in the ¾ cup unsalted butter using a pastry cutter to form a crumb mixture. Reserve 1 cup of the crumb topping and set aside.
- Add 1 large beaten egg, ¾ cup sour cream, ½ teaspoon salt, ½ teaspoon baking powder, 1/2 teaspoon baking soda, and 1 cup grated carrots . Mix well.
- Spread the mixture in the bottom of prepared pan, and two inches up the sides.
To Make the Cream Cheese Filling
- In a separate bowl combine 1 (8-ounce) package cream cheese, ¼ cup granulated sugar, and 1 egg beaten.
- Pour the cream cheese filling over the cake layer.
- Sprinkle reserved crumb mixture over the top of the cake, distributing evenly.
- Bake for 45 minutes to 1 hour or until a toothpick inserted in center comes out clean.
- Cool for at least 30 minutes, preferably overnight in the fridge.
