Ingredients
- 1 lb ground sausage
- 1 cup pancake mix or Bisquick, 145 g
- 1 cup cheddar cheese 2.7 oz
- 1/4 cup Parmesan Cheese .65 oz
- 3/4 teaspoon dried parsley
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder

Instructions
- Preheat Oven: Preheat oven to 350℉ and line a baking tray with parchment paper.
- Mix: Add pancake mix, parsley, onion, and garlic powder to a small bowl and mix. Add sausage and cheddar and parmesan cheese to a large bowl. Add the seasoned pancake mix and mix well. Keep mixing for a couple of minutes as the more you mix the more the pancake mix will incorporate.
- Roll: Gather some of the sausage mixture and roll into 3/4 - 1 inch balls and add to parchment paper lined tray. Repeat with all sausage mixture.
- Bake: Bake in the middle rack of the oven for 20 minutes.
- Serve and Enjoy hot with toothpicks and your favorite dipping sauce

- While the traditional Southern size for sausage balls is 3/4 to 1 inch, you can of course make them in any size you prefer. Just be sure that they are cooked to at least 160 degrees F.

- Roll the sausage balls and flash freeze them on a baking tray for 1-2 hours before transferring them to a freezer-safe container or plastic bag and freezing them for up to 6 months. Cook them frozen in a 350-degree F oven for 20-25 minutes.
