Muddy Buddies Chex Mix Recipe with peanut butter chips, chocolate chips, and corn and rice Chex cereal is a classic snack mix
Share:
Ingredients
- 3 cups Corn Chex
- 3 cups rice Chex
- 3 cups Chocolate Chex
- 1.5 cups mini pretzels
- 1 cup mixed nuts
- 3-4 cups powdered sugar
- 1/2 cup peanut butter chips
- 1/2 cup semi-sweet chocolate chips
For the sauce:
- 1.5 cups semi-sweet chocolate chips
- 3/4 cup creamy peanut butter
- 1/2 cup salted butter
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, gently stir together the corn chex, rice chex, chocolate chex, pretzels, and mixed nuts, and set aside.
- In a medium-sized microwave-safe bowl, make the sauce. Add the chocolate chips, peanut butter, and salted butter. Microwave in 15-30 second intervals, stirring in between until melted and smooth.
- Stir in the vanilla.
- Add the chocolate mixture to the Chex ingredients and gently stir to combine until well coated.
- Working in batches and using a zip-top bag, add about 2 cups worth of the Chex mix mixture. Pour in some of the powdered sugar, about ⅓ cup. Close the bag and toss well to coat everything in the powdered sugar. If it seems like you need more powdered sugar, add more until it is coated to your liking.
- Add the coated mixture to a large bowl and repeat until all of the Chex mix is coated. How much powdered sugar you end up using depends on how much you add to each batch.
- Finally, toss the peanut butter chips and chocolate chips with the Chex Mix. Serve immediately or store in an airtight container until ready to serve.
Notes
- A fun twist on both muddy buddies and Chex mix. The flavors and textures combine well for the crunchy snack!
- This is the perfect treat to customize to your tastes. Only like pecans? Just add pecans; want white chocolate chips instead of peanut butter chips? No problem!
- If you cannot find chocolate Chex, just use more rice or corn Chex. You can use whatever variety of Chex cereal you like, just make sure you use 9 cups.
- Honey-roasted mixed nuts would also be a good addition!
- Use Nutella in place of peanut butter for an even more chocolatey treat.
- I personally store this in the freezer and eat it like that, it is AMAZING frozen!!
- This makes amazing gifts!
- Store in an airtight container at room temperature for up to 1 week, in the fridge for up to 2 weeks, and freezer for up to 2 months.
