Chicha morada is an iconic, non-alcoholic Peruvian drink made from purple corn, one of several varieties of Peruvian corn.

Ingredients
- 1 lb purple corn on the cob
- 1 pineapple , ripe
- 3 medium quinces
- 2 tart apples
- 2 large peaches , peeled and diced (optional)
- 8 whole cloves
- 2 cinnamon sticks
- 4 quarts water
- 5 limes , squeezed
- 1 cup caster sugar
- Ice cubes

Instructions
- Wash the purple corn.
- Peel the pineapple, and reserve the skin and core.
- Peel and chop the apples and quinces.
- Place the pineapple skin and core, purple corn, apples, quinces, cinnamon sticks and whole cloves in a large saucepan. Then add the water.
- Boil for 1h30, over low to medium heat and covered. After cooking, the liquid should take on a dark purple color.
- Strain the mixture to remove all solid ingredients.
- Add sugar and let cool.
- Add the juice of the limes when the liquid is completely cooled.
- Add the diced peach (optional) and ice cubes before serving.
